Can you learn to play piano songs on a midi keyboard?

I've been searching on this subject for a lomg time, and I found a lot of information, but i'm still confused.
So, here is my personal situation:
I would like to learn how to play the piano, but I don't have the money nor the space to get a real one, or a digital piano, so now I would like to just play piano songs.
Some people say that without real weighted keys it's not even worth sitting to play, some people say that you can learn but the switch to a real one would be difficult and so on.
So the thing is, I don't plan to perform, heck, I don't think I would play outside of my room or use a real piano.
My pretension is just to learn to read sheet music and to play some songs that I like.
I was looking to get a midi controller keyboard to Connect to the computer and play that way, a 61 keys one, it's the most affordable money and size wise, with semi weighted keys (nothing compared to real hammer action Keys)
The question is, is it possible? Are 61 keys enough? I've read a lot of opinions, some said that in order to play you need a 88 hammer action key piano, sculpted by the gods themselves, some explained very well the differences, but I still don't know if I could just learn to read sheets, play the songs I like casually on a 61 keys midi keyboard.

MIDI Controller - n00b questions (thanks in advance!)

UPDATED TO NOTE: I ended up purchasing an NI S88 keyboard, though it's sadly on backorder.
Hey y'all,
Long-time hobbyist classical/jazz pianist, lapsed composer, first-time MIDI-controller purchaser.
I'm building an "introductory" hobbyist music studio so I can enjoy composing stuff for the enjoyment of myself, friends, etc. DAW + MIDI controller + VSTs etc. Main style is 'film-score'ish', pop, ballad, etc. not much into loops, EDM, and so on. Think Alan Silvestri but just a few orders of magnitude less talented :p.
Some questions:
  • 61 vs. 88 keys: Aside from differences increases in cost and size, any other downsides for 88 keys? For instance, this keyboard will be perpendicular to my main desk (with monitor, computer); will the extra length of an 88-key keyboard make for more ergonomic annoyance? e.g., with a narrower keyboard, I could probably just swivel my chair, but for a longer one, more shifting required? Seems silly, but over time...
  • Pads/sliders/etc: What do I really need here? Obviously pitch bend + mod wheel. And I plan to buy a sustain pedal (for piano'ing) and an expression pedal (for volume of strings, etc.). I guess drum pads are handy'ish. But all the dials and sliders? If I'm just not expecting to be that much into hard-core producing, are those just a waste of space? My main interest is being able to efficiently control articulations like string legato vs. staccato, brass scoops and doits, etc., but all that's doable using the actual keyboard notes, right?
Am I missing any key (ha!) considerations?
  • Full-size keys, semi- or fully-weighted
  • USB-MIDI support
  • Input for sustain and expression pedals
  • Portability isn't a concern (not planning to travel with this)
  • And also not planning to play live for an audience, just using it for composing
I'm likely gonna be going with EastWest VSTs, not NI ones (yay Composer Cloud!), so this probably makes the NI S88 a lot less interesting (but still worth considering?).
Re DAW: leaning towards FL or Cubase; just want whichever one is more straightforward. If it was up to me, I'd probably choose GarageBand, but my main computer is a Winbox, so yeah :\
So with all this said, suggested short-list of MIDI-controllers to consider?
